Mini Cream Puff







The filing of cream puff are made of Sabayon + whipped white Chocolate whipping cream.

  2. Sabayon are mainly made of egg, sugar and milk or liqueur or lemon juice beat in double boil water till thick and fluffy.

    U can serve it on top of the fresh fruits or mix with gelatin and whipped whipping cream to made mousse.

  3. For eg. Lemon moussse. u needs:

    30g egg yolk
    40g sugar
    25g white wine (optional)
    25g lemon juice
    1/2 lemon zest
    2g leaf gelatine
    100g whipped whipping cream

    gelatine and whipping cream are added last.
