Sweet Potato Curry Bun




The skin are made of cooked sweet potato + Sweet Potato Curry filing + Bread crumbs coating.

    Recipe as below:

    A. Bread Flour 500g
    Sugar 140g
    salt 5g
    milk powder 12g
    b. sweet potato 150g (cooked)
    whole egg 50g
    ice water 230g
    c. dried yeast 8g
    d. butter 50g

    methods :
    Direct mixing except butter till not stick to the bowl. Add butter last till smooth.

    Basic fementation - 60min
    divide and rest - 30min (@28 degree c)
    last fementation - 55min
